CHIPOTLE MINI MEATLOAF W. FIRE ROASTED TOMATO SAUCE
- 1lb Lean Turkey
- 1lb Lean Sirloin
- 1 tbsp olive oil
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 2 tbsp chipotle chili powder
- 1tsp paprika
- Salt and pepper
- 1 can fire roasted tomatoes, drained
- 1 medium red onion, chopped
- 2 tbsp coarse ground mustard
- 1 tbsp Worcestershire sauce
- 1 tbsp brown sugar
- 3/4 cup Traditional Bread Crumbs
- 1 egg
Pre-heat oven to 350 degrees.
Meatloaf: Combine turkey, sirloin, garlic powder, onion powder, chipotle powder, paprika, bread crumbs and egg. On baking sheet, divide into 4 equal mini-meatloafs. Bake for 45 minutes. While meatloaf is cooking, make the sauce.
Sauce: In medium saucepan, heat 1 tbsp of olive oil. Cook red onion down for about 3-4 minutes. Salt and pepper to taste. Then add Worcestershire sauce, mustard and brown sugar, Once sauce comes to boil, reduce heat and simmer.
Top meatloaf with sauce. Serve with green vegetable. (Hint: try steaming your veggies so you’re not temped to use extra oil while cooking)
